Week 18 – All those tomatoes at the top of the picture below are from my garden and I just couldn’t be bothered moving them… the next day they were cooked down for sauce and I canned 7 pints and used the rest for a pot of spaghetti.

So from the far left we have Lettuce, Peaches, Pears, Green Beans, Kale, Red & Green Peppers, Kiwi Berries, Tomatoes, Zucchini, Cherry Tomatoes.

Just a note here… If I had seen these Kiwi Berries in the store I would not have bought them – seriously they aren’t anything to look at.  The package says to set them on the counter for a day or two and they are ripe when they are soft and wrinkly… and oh my goodness are they good! So Sweet!

Weeks 14 – 16 Playing Catch-up… Part 1

I had good intentions to use this blog as a means to highlight the wonderful food we’ve been getting from the Lancaster Farm Fresh Cooperative and maybe show some of the things I’ve been cooking with them… but goodness I just haven’t had the time.

It’s been a busy summer!  I hurt my wrist early on which fortunately wasn’t broken but I ended up in a splint for a couple weeks wasting time and then I broke a toe… seriously!  I broke a toe standing up and walking away from a hand quilting frame.  Ever know anyone who could break a toe while hand quilting?  Yeah… it’s been that kind of summer…

Anyway here are the pictures I’ve been taking faithfully every week…

Week 13

Week 13 is about 1/2 way through the CSA Summer Session (25 weeks) and continues to bring lovely fruits and veggies our way.

W13 All LFFC

Sweet Corn, Red Seedless Watermelon, Peaches, Baby Flower Watermelon, Yellow Roma & Red Slicing Tomatoes, (more…) Carrots, Kale, and some Yukon Gold Potatoes I swapped a beautiful Black Eggplant for.  It was a beautiful eggplant but I’ve never cooked eggplant… never as an adult eaten eggplant.  The two medium sized eggplants I received the other week ended up in the trash because I never got around to using them – I decided to swap the one for this week out for potatoes which I know I’ll use.

W13 Fruit Share Red Seedless WM - Peaches

Although a watermelon came with the Veggie Share I also received another in the fruit share with some lovely peaches.  Can you ever have too much watermelon?

W13 Red Slicing - Yellow Roma

Tomatoes!  I have to admit – these all went into a pot over the weekend with a batch from my garden and I now have about 2 quarts of sauce – one for the freezer and one will be used today for a meat sauce for spaghetti.

Week 12

I went to download my pictures this weekend…

W12 All LFFC

and I found that I took just the one picture.  No individual pictures – I was running a little later in my pick up time that day and I guess I was in a hurry to put everything away when I got home.

I think the color theme was orangeCantaloupe, patty pan squash, tomatoes, carrots, eggplant, cherry tomatoes, peaches, sweet corn, watermelon, apricots.

mater pie

Tomato Pie (quiche) using some of my homegrown tomatoes and one of those lovely yellow ones from the share – oh my was that yellow one meaty!!  Also in the pie was some of the raw milk cheddar I had gotten previously and some crispy bacon, eggs, and light cream.  A little side of a cucumber salad and I called it dinner.

I made two pies – one we will eat now and the other will get wrapped up and frozen for a hectic day down the road.  I never ever make only one quiche – I never have any problems freezing them and enjoy have a quick meal ready to go.

I was going to put one of those peaches in my husbands lunch but decided that a peach pie sounded good… that’s on the agenda for tomorrow.

Baked Hard Boiled Eggs

I know…

That kinda sounds like saying your favorite color is sky blue pink…

Baked? Hard Boiled Eggs?  Go ahead… do what I did and Google it – you will find lots of recipes all saying about the same thing.

Take your eggs and put them in a mini or regular muffin tin (some just lay them on the oven racks) and then pop them into the oven at 350 degrees for 30 minutes.  Take them out and give them an ice water bath for 10 minutes and you are done.

My daughter uses a regular muffin tin pan which is larger all around. I had put a dozen in my mini pan – next time I’ll use both my mini pans and spread the eggs out at bit – although all my eggs are cooked – a couple were just barely almost not quite completely done.  Did that make sense?  The eggs were good and the whites were less rubbery… not that that texture ever bothered me before.

This was so easy… who’d of thunk?

Week 11

Oh my…

W11 All LFFC

Sweet Corn, Blackberries, Sungold & Red Cherry Tomatoes, Garlic, Blueberries, Beets, Carrots, Basil and Cantelope

So what to do with those luscious Blackberries and Blueberries?  How about some pie?  I used a gluten free pie crust I had in the freezer… which explains why my top crust looks all torn apart… it is.  That stuff doesn’t want to come out of the pan. I’ll have to consider a crumble type topping next time.

All it needs is some ice cream!  Which I added after snapping this picture.

I used this recipe from allrecipes.com – using 2 cups each of the black & blue berries.

I will make this again – it was yummy!

Love these carrots… purple, white, yellow and orange!
